Healthy Cherry Bread

Hi everyone, I was thinking of making some kind of healthy, energy – giving, quck, flourless, oat based and deliciously moist bread that I could eat for breakfast or throughout the day as a snack. This naturally sweetened cherry bread is perfect and a great way to use fresh cherries in the summer. As for a matter of health, cherries can help with weight loss and are packed with antioxidants.

Ingredients

  • 3/4 cup of fresh cherries
  • 2 small overripe bananas
  • 1 cup oat flour
  • 1/2 cup of coconut oil
  • 1 tbsp baking powder
  • 1/2 tbsp baking soda
  • A pinch of salt
  • 1/2 tbsp cinnamon powder
  • 1 tbsp honey
  • 1 tbsp vanilla extract
  • 1 egg
  • 1 tbsp peanut butter

Preparation

In a bowl add flour, baking powder, baking soda, salt and cinnamon powder and mix well. In another bowl place the bananas and smash them, add coconut oil, honey, vanilla extract, egg, peanut butter and whisk just to combine. In the same bowl add the mixture of the other bowl and mix well. Add fresh cherries and give it one last mix. Preheat the oven to 200°C and bake the bread for approximately 30 minutes. Enjoy!
