Easy Banana Oat Pancakes

Easy, banana oat pancakes are a healthy, delicious breakfast served with honey or maple syrup that can be made in minutes. Classic pancakes (assuming “classic” refers to pancakes made with white flour) will drop your energy and make you hungry after a few hours, whereas oat pancakes will leave you full and energetic for many hours, beacuse they are gluten free, dairy free and sugar free.

Ingredients

  • 1/2 cup of oats
  • 1 egg
  • 1 banana (half for the blender and half for decoration)
  • 1 tbsp Greek yogurt
  • 1 tsp baking powder
  • 1 tsp cinnamon powder
  • 1 tsp honey

Preparation

Add oats, egg, banana, Greek yogurt, baking powder and cinnamon powder in a blender and mix all the ingredients. Meanwhile, heat a large pan over medium – high heat. Add some drops of oil (olive, coconut or butter). With a large spoon add one by one some proportion from the mixture. Cook until bubbles appear on the surface, about 3 minutes. Flip the pancakes and cook 2 minutes more. Transfer the pancakes to a plate and add some toppings like slices of bananas and honey. Enjoy!
