
A velvet soup of any kind is always a good idea in winter time. With only three ingredients this recipe is suitable for those who want something easy, healthy and delicious. The sweet potato will make this recipe richer, the onion tastier and the beets will add a deep red colour.
Ingredients
- 1 big onion (diced)
- 1 sweet potato (peeled and chopped)
- 4 small beets (peeled and chopped)
- Olive oil, salt and pepper
- A juice of 1 orange (optional)
Topping (optional)
- A spoon of yogurt
- Some walnuts
- Olive oil
In a saucepan sauté the onion in the olive oil for about 5 minutes. Add the sweet potato and the beets and sauté for 1 minute. Add in water, salt and pepper. If you want an extra flavour you can add a juice of 1 orange. Reduce heat and let all the ingredients boil for 40 minutes. If necessary, add extra water. When they will be ready, use a hand blender or a mixer to puree the soup. Finally, serve with a spoon of yogurt on the top, some walnuts and olive oil.
